
The word vegetable is derived from the Latin term
vegetabilis, meaning animating. Fresh greenfood is an essential constituent of all balanced diets. The importance of vegetables and fruits for the maintenance of good health and bodily vigour is generally recognised today. During recent years, the popularity of the salad vegetables has increased steadily, so that now there will be few households in which tomatoes, lettuces, cucumbers or other fresh produce of similar type do not find a place. Correspondingly, the interest in the basic greenstuffs, such as cabbages, spinach, brussels sprouts, green beans, and cauliflowers, as well as in aubergines, sweet peppers and other more exotic produce, has also risen, since, once accustomed to the taste of fresh vegetables, people are loath to do without them in some form or other at times when perhaps their first choices may be unavailable. In home hydroponic gardens you can grow all the vegetables and salads you may desire, together with some fruits and root crops or potatoes, if you wish. The exact selection of the plants will of course depend upon the personal preferences of the housewife or amateur gardener and the space available. Local climatic conditions and facilities for giving protection during periods of colder weather are further factors that have to be taken into account. But it is worth remembering that hydroponic vegetables and fruits mature more quickly than those planted in soil, produce far higher yields and need less space.
